Lets be short and sweet here (Or creamy and savory…): this soup is amazing, it is so simple, and you should go make it right now.
Here are the ingredients:
- Chicken Broth
Yep. Thats it. Again, i’m terrible with ratios so…how many of each of these ingredients? Well, I’ll say one large leek, 2 quarts chicken broth, 2 cups chopped potatoes, 1/4th cup butter…maybe less….maybe more? OK maybe not more…maybe more like half of a 1/4th cup? What measurement is that? See I never did really well in math, and this is why I’m not a mathematician, I’m a nutritionist! Do not taunt me with your fractions!
Erm. Anyway. Basically you sauté the leeks real nice in the butter, heat up the broth in a soup pot, add the potatoes in, then the leeks once sautéd, and the salt to taste, and let it simmer for awhile until the potatoes are done. Then you puree it smooth with a hand blender, and enjoy immensely.
Now obviously you dont have to stop at 5 ingredients. You could add all sorts of herbs, onions, black pepper, bacon, and other varieties of free range joy and organic joy. You just don’t HAVE to add anything else for it to be amazing.
