I made tapioca pudding!
I was hoping to make tapioca bubble tea but it didn’t quite turn out that way.
I still really want to figure out how to make bubble tea, but I guess for now this will do.
1/2 cup of dried tapioca pearls
1 1/2 cups or so preferred milk
1/4 cup honey
1 tsp vanilla
1 TBS cinnamon plus a little extra to sprinkle on top
Soak tapioca pearls in 1 cup almond milk for 40 min-1 hour, they should be somewhat soft but still firm.
Transfer to stove top and turn on medium heat. Add remaining almond milk, vanilla, honey and cinnamon. Stir continuously with a sturdy whisk as the mixture begins to thicken. Stir for about 10 minutes until you like the thickness, transfer to ramekins and top with a sprinkle of cinnamon.
Enjoy warm or put in the fridge to enjoy cold.
